Spinach Lasagna Roll-Ups










Made these for dinner tonight and they were AMAZING! I’m not a fan of regular lasagna –  I hate how the edges get all crispy. Blecha! So I thought I’d try these as an alternative…and I’m so glad I did! They were very easy to make, and not too expensive. The most expensive ingredient was the ricotta cheese, and even that wasn’t bad. So here’s the recipe! Enjoy, my darlings!


1 lb. lasagna noodles

15 oz. ricotta cheese

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 large egg

10 oz. frozen spinach, with the water all squeezed out

1 jar of marinara sauce

salt and pepper to taste


Preheat the oven to 400 degrees

Bring a large pot of water to a boil.

Add in some salt and the lasagna noodles. (I added the whole package, but you only need about 10 noodles…I made extra in case I ripped them…turns out…I didn’t need them.)

Cook the noodles until they are al dente (soft, but not soggy…about 15 minutes)

Drain noodles in a colander (I rinsed them as well…but that is up to you)

While the noodles are cooking, thaw out the frozen spinach in the microwave (I cooked mine for about 5 minutes)

Let the spinach cool a bit before squeezing it dry….or you WILL burn yourself…as I found out the hard way. 🙂

While the spinach is cooling, combine the cheeses, salt and pepper in a bowl and mix thoroughly.

Add the dry (or as dry as you can get it) spinach into the bowl and mix together.

On a clean surface, lay out a few noodles at a time.

Spray a glass cooking dish with non-stick cooking spray

Spread a few tablespoons of the mixture on the noodle…be sure to cover it from end to end. Don’t put too much on there because as you roll it up it will be compounded.

Roll the noodle up and place seam side down in cooking dish

Continue until all the mixture is gone (I was able to get about 8 rolls)

Cover the rolls with marinara sauce completely (it keeps the noodles soft while they cook)

Cover the baking dish with foil and cook for 30 minutes.

I made some garlic bread and served with the roll-ups. They were REALLY good!!
